The word ‘nonya’ is a respectful term for the female elder of the Peranakan community - descendants of Chinese migrants who settled in Malaysia then intermarried with the locals. Here we’re making a duck curry from this nonya community, containing incredibly tender meat in a rich and spicy sauce. We’re serving the curry with kerabu (a cucumber and onion salad flavoured with shrimp powder) and lacy turmeric pancakes known as roti jala which are perfect for mopping up all those curry juices. In Malaysia a special 5-spouted bottle is used to achieve the lacy effect but drizzling the batter from a spoon does the job just as well!

REMPAH SPICES: Chilli flakes, toasted coriander, turmeric, paprika, toasted cumin, lemongrass, kaffir lime leaf, white pepper, shrimp powder (shrimp, cornstarch), galangal, fennel, cassia

WHOLE SPICES: Whole chilli, star anise, cassia quill

TURMERIC.

SAMBAL SPICES: Chilli flakes, chilli powder, tamarind powder (tamarind, cornstarch), toasted cumin

KERABU SPICES: Chilli flakes, shrimp powder (shrimp, cornstarch), onion, kaffir lime leaf

CABBAGE SPICES: Red pepper flakes, mustard seeds, turmeric

  • 4 duck or chicken legs
  • 2 medium red onions 
  • 4 garlic cloves
  • Fresh ginger 
  • green cabbage (any type) 
  • 2 carrots 
  • 25g bunch of coriander 
  • 1 cucumber
  • 1 lime
  • 1 egg 
  • 1 tbsp sugar
  • 100g plain flour
  • 200ml full fat coconut milk (½ a standard sized tin or you can buy as a sachet)
  • Rice for 4 to serve
