berbere
Ingredients: cumin, coriander, black
pepper, chilli, ginger, paprika, fenugreek, allspice, cloves, ajowan,
cardamon, cinnamon
Pronounced ber-beray this is a hot, pungent mix from Ethiopia. Often berbere is used in a similar way to garam masala or as a condiment, the flavour is peppery and earthy with strong notes of fenugreek, cloves and cumin.
