Ingredients: cumin, coriander, garlic, onion, parsley, coriander leaf, salt, cayenne, black pepper

Chermoula is a Moroccan mix useful to season fish, chicken or vegetables and to make a dressing. The flavour isn't particularly hot, just very fragrant with the scent of cumin and coriander seed and leaf. Use either as a dry seasoning or even better, mix with a squeeze of lemon juice and a splash of olive oil to make a paste then use to marinade meat or fish before cooking. To make a dressing just thin the marinade with more lemon and olive oil
