Strictly speaking a tagine is the name for the cone-shaped cooking pot but has become known as the name for what is basically a spiced stew with a base of onions, garlic and tomato. Vegetables, fish or meat are all good cooked in this style with the tagine spices and a hint of sweetness that is crucial - add raisins, chopped dates, honey or apricot uses: Use the tagine spices as a dry seasoning with a pinch of salt for fish, roast vegetables or grilled meats.
