rub
Ingredients: sugar,
paprika, salt, yellow mustard, ancho chilli, coriander seed, black pepper,
garlic, onion, chilli, celery seed, red pepper
Sweet, savoury and spicy this rub gives a lovely crust and flavour to
grilled or barbequed meats. Sprinkle over the flesh in place of salt,
then leave to dry for a few minutes so some of the mix is absorbed onto
the meat. Grill or barbeque over a low heat to avoid the flesh charring
too quickly, you can squeeze some lemon over the flesh while cooking to
reduce the caramelisation process and enhance the flavour.
uses: Seasoning for pork, chicken, lamb, oily fish (mackerel,
salmon, sardines etc). Great for a barbeque
