You need:
70g butter at room temperature
2 tbsp treacle
80g light muscavodo sugar
250g plain flour
1 egg yolk
4 tbsp milk

Kit contents:ginger, cassia,
mace, nutmeg, cloves, allspice,
long pepper, bicarbonate of soda

Preparation time: 10 minutes plus 20 minutes cooking time

Panpepato Recipe Kit - Panpepato is an Italian Christmas treat popular with all ages, a
delicious mix of nuts, dried fruit, chocolate, spices and honey. Created in the wealthy city of Siena many centuries ago, it’s the liberal use of hot spices, particularly the inclusion of pepper (and even chilli in some versions!) which make it so
special and also unusual in modern Italian cooking. Cakes like this are a reminder of how important exotic and rare spices
were to the wealthy populations of Europe’s great cities, and how they can still thrill our tastebuds many centuries later

You Need: 200g whole mixed nuts - almonds, hazelnuts and walnuts are good
100g cut mixed peel or other dried fruit such figs, apricots, glace
cherries
100g sultanas
200g dark chocolate
150g runny honey
80g plain flour
1 tbsp cocoa powder
brandy or marsala wine - optional

GROUND SPICES: ground black pepper, ground cinnamon, ground coriander, ground nutmeg, ground aniseed, ground cubeb
pepper, vanilla powder, ground cloves.
WHOLE SPICES: pink peppercorns, green peppercorns

Spicy Pickled Pears Recipe Kit - These pears keep for ages and look lovely, especially with the
whole spices left in the jars; they make wonderful homemade gifts and can be eaten cold or warmed and served with rich game or goose. Eating pickles with rich meats is an old, somewhat forgotten tradition as not only is pickling a great way of preserving fruits and vegetables, but the spices and vinegar aid in the digestion of the meat.

You need:
8 conference pears
600 ml white wine vinegar
300g caster sugar
A few thin slices of lemon
2 or 3 large jars

Kit contents: WHOLE SPICES: cinnamon quill, root ginger, bay leaf.
PICKLE SPICES: allspice berries, juniper berries, mixed peppercorns, birds eye chilli

Preparation time: 10 minutes plus 30 minutes cooking time

Boxing Day Chutney Spice Pack- a delicious spicy chutney to serve with all the Christmas cold meats, cheese or even to liven up those dreaded turkey sandwiches!

You need:
400ml wine or cider vinegar
400g sugar
1kg cooking apples
1 large onion
Couple of handfuls of raisins

Kit contents:nigella seeds,
cinnamon, coriander, ginger,
cassia, mace, cloves, allspice

Preparation time: 10 minutes plus 1 hour coking time

The Ultimate Christmas Cake Recipe Kit - This is the classic rich fruitcake which is an essential part of any British Christmas. It’s best to make the cake as early as possible so you can ‘feed’ it alcohol in the weeks leading up to Christmas, making it rich and decadent - the maturation of the cake makes for a much better flavour.

You need:
300g sultanas
250g raisins
250g currants
100g glace cherries - halved
100g mixed peel
Brandy, sherry or marsala
225g unsalted butter – at room temperature
200g soft dark brown sugar
4 large eggs
300g plain flour - sifted
80g whole, blanched almonds
20cm approx. diameter baking tin – greased and double lined

Kit contents: CHRISTMAS CAKE SPICES: 3 tbsp (1 ¾ tsp mixed spice, 1 ½ tsp ground cinnamon, 1 ½ tsp ground ginger, ¾ tsp ground nutmeg, ½ tsp ground allspice, ¼ tsp ground orange zest, ¼ tsp ground lemon zest).

Preparation time: 24 hours to soak the fruit, then 40 minutes preparation & 2 ½ hours cooking time

Mulling Spices Pack - a blend of crushed and whole spices to make a fantastic mulled wine. SImply add the spices to a pan of red wine with an equal amount of water. Add sugar to taste (at least a couple of generous tablespoons) and bring to a simmer (don't boil!)
