more reliant on sugar than fruit. This express version has a much higher fruit content and can be enjoyed with all manner of Indian and British dishes to add a sour tang, a hint of spice and an extra punch of flavour.

You Need: 2 large ripe mangoes, 80g sugar, A small piece of ginger, 2 cloves of garlic, Vinegar

kit contents: garam masala, toasted cumin seeds, toasted nigella seeds, fenugreek. long chilli.

preparation time: 15 minutes + 30 minutes cooking time + time to cool
