samosas & bhajis
These are our easy versions of the most familiar and
popular Indian snacks which are all much simpler
than you might think to make from scratch. The
spices for the samosas include fragrant ajowan
seeds which have a deeply savoury, herbal flavour,
while the onion bhajis have lots of fragrant
fenugreek and a touch of chilli.

You Need:1 medium carrot
1 large floury potato
100g frozen peas
3 medium onions
2 cloves of garlic
A small piece of ginger
1 packet of filo pastry
130g gram flour mixed with 1/2 tsp
baking powder (or 130g self raising flour.)
kit contents:samosa Spices: toasted mustard seeds, toasted cumin seeds, toasted ajowan
seeds, ground coriander, ground cumin, ginger,chilli powder, turmeric.
bhaji Spices:hot curry powder, mild curry powder, ground coriander,
ground fenugreek, turmeric, garam masala, ground cumin.
chaat masala: Chaat masala
preparation time: 30 minutes plus 30 minutes cooking time

good with: salad/chutney/raita, real mango chutney or any curry as a starter!
