This dish is a little known Mexican classic, a street food traditionally made with cheap cuts. It’s basically a spicy Mexican meat stew given depth with the use of several different chillies.

This version uses three different dried chillies - pasilla, ancho and chipotle which all have
different but complementary characteristics

You Need: 800g diced stewing beef, 200g tin chopped tomatoes,, 2 medium onions, 5 cloves garlic, 3 tomatoes, 2 limes, 2 avocados Sour cream to serve (optional), Rice for 4, 2 packs of soft tortillas or wraps

kit contents: Mexican oregano, cinnamon, pasilla powder, ancho powder, cumin,allspice, sweet smoked paprika, whole chipotle chillies Salsa: chipotle powder, coriander leaf

preparation time: 20 minutes plus 2 hours cooking time
