Fajita means ‘little strap’ or ‘belt’ was first made with the beef skirt or ‘muscle strap’ from Texan cows - it was considered a cheap cut with which the Mexican round up cowboys were paid. It’s only become a popular dish over the last 30 years and is quick and easy finger food where the beef (or more popularly chicken) are griddled with spices and served in tortillas wrapped up with all manner of juicy extras. Smoky paprika, Mexican herbs and cumin are all key flavours in a good fajita blend and this rustic earthiness is lifted by the lime and tangy, smoky tomato salsa – all the exciting, colourful flavours you'd expect of Tex-Mex cuisine. The mahlab seeds used here are the husked kernels of small wild cherries from the same family of plants as peaches and plums. They have a beautiful flavour of sweet cherry and bitter almond similar to marzipan. They're delicious as used here to perfume a simple dark chocolate pot with some fresh or tinned cherries at the bottom You Need: Fajitas :3 peppers
