origin: Turkey Aleppo pepper are flakes from a mild fat red chilli that's been crushed without a huge amount of seeds giving a really useful texture and delicious flavour without too much heat or pungent dried chilli aroma. The whole chillies are salted and dried then flaked and rubbed with oil giving a wonderfully bright, rich colour and delicious sweet flavour. The chilli flakes can be sprinkled over salads or raw food as well as used in cooking and are equally good with fish, meat or vegetables. Once you start to use them you'll find that you use them in virtually everything! You sometimes see them on the table in Turkish restaurants where they're used as a condiment like pepper and sprinkled over hot food at the table.
