The habanero is breath-takingly hot but also has a delicious fresh fruity flavour. Use with caution, be sure to wash your hands carefully after handling the chilli. I have heard of people rubbing their hands with a thin layer of olive oil to form an impenetrable barrier to the chilli oils before being washed off with soapy water - may be worth a try or just use a teaspoon!

uses: Add a pinch to salsa or sauces for an injection of heat, the longer the habanero chilli flakes infuse in the sauce, the more powerful the flavour.
good with: pineapple, yoghurt, mint, mango, tomato, vinegar, orange, lime, coriander leaf, onion, tamarind, allspice.
