Chillies & Paprika There's far more to dried chilli than simply heat, there are subtle sweet, earthy and complex flavours to discover. Drying the chilli pepper seems to give a complexity and depth of flavour as all the natural sugars in the flesh caramelise that's often unobtainable with fresh.Particularly good are the chipotles when added whole to a slow-cooked dish such as a stew or braise where the deep smoky flavour seeps out and produces stunning results. |
