The powerful flavour of lavender is used in European cooking in such blends as herbes de provence, some North African blends and is useful in both sweet and savoury cooking.

uses: Infuse in a jar of sugar to gently scent future desserts. Lavender is a classic flavouring or accompaniment to chocolate - infuse the flowers in a custard, cream or chocolate mix. Add a couple of flowers to a cocktail for a summery flavour. Crush the flowers and add to a marinade for seafood or lamb kebabs.
