black peppertellicherry black peppercorns:

origin: india

The finest black peppercorns from the malabar coast of Southern India. Very high levels of essential oils and a very hot and deliciously fragrant flavour and scent when ground. Pepper was the driving force for the age of exploration when European adventurers made epic journies in search of the mystical, faraway lands that produced this fantastic spice. Empires and fortunes were built on the back of this trade, the splendour of Venice was due in a large part to the spice trade and mainly that of pepper. Pepper has even been valuable enough at times to be used as currency - hence the term peppercorn rent.

uses: Best if ground or crushed as closely as possible to the time of eating, grind over virtually any food whether sweet or savoury. Pepper is as much a complement to fruit as steaks.
