origin: indonesia Also known as Java or tailed pepper due to the stalk left on the berry, cubebs were once widely traded but are now obscure. They have been used at various times as a substitute for black pepper, in drinks, medicines and are even reputed to be a formidable aphrodisiac. They have an interesting menthol peppery flavour with a hint of citrus or eucalyptus and a slightly bitter finish. uses: Use in place of black pepper, particularly with seafood. Crush and mix the cubeb pepper with salt, herbs and favourite spices for a dry seasoning mix.
