origin: angola A sharp, hot, peppery flavour with delicious elements of cardamon and a distinct freshness and bite. Grains of paradise are small seeds similar to those in a cardamon pod, and can be eaten whole, crushed or ground. The flavour is more subtle and less pungent than pepper but when freshly ground or crushed, no less hot. Grains of Paradise are often used as a substitute for pepper in West Africa and in spice blends for the delicious and complex flavour they give. As well as being delicious and easy to use, the very name is so evocative and beautiful (a remnant of the mystery of the spice trade and how closely guarded the source of this valuable commodity was) - what's not to like? uses: Add crushed or whole grains of paradise to rice or potatoes. Use grains of paradise in place of pepper to season lamb or beef, or even scatter over a fillet of fish to be grilled.
