Known as the 'queen of spices' due to the high cost and highly scented flavour. The sweet green cardamon (or sometimes spelt cardamom) pods are useful for curry, rice or even to flavour coffee in the Arabic style. The flavour is aromatic, pungent, sweet and slightly camphorous with a gently eucalyptus-like taste.
