Ground dried horseradish powder that is useful for making a spicy condiment.
Make up a quick horseradish sauce to serve with roast meats or smoked fish.
How to use powder:
Mix the horseradish powder with cream, creme fraiche, sour cream, mayonnaise or even tomato sauce.
Add a squeeze of lemon if possible and a pinch of salt then leave the sauce to sit for at least a couple of hours for the flavour to develop as the initial taste is quite bitter. This will mellow fairly quickly and the sauce will taste hot and earthy. Sweetening with sugar or honey also helps balance the flavour and makes it a little milder. Use sparingly as it can be overpowering.
Goes well with the earthiness of beetroot, we mixed 1 tbsp horseradish powder with 3 tbsp sour cream, and a pinch of salt to be served on top of borsht. This is quite a strong mix, but can be adjusted to taste.
Once made:
uses: Mix into a coleslaw or creamy salad dressing, horseradish flavoured mayonnaise is great for BLT
