India is renowned for its countless offerings of tasty street snacks which are a highlight of any visit. Sweet, sour and savoury flavours are combined with a range of soft and crunchy textures and multitude of colours making the food appealing to the eye and incredibly moreish. Here we’ve got homemade crispy vegetable samosas with a tangy tamarind chutney and charred tandoori lamb kebabs. Next is pav bhaji: originally invented to feed hungry factory workers, it consists of buttered rolls topped with a vegetable and lentil curry highly seasoned with herbs and spices and the tang of amchur (unripe mango powder). Finally, there’s a zingy chaat salad made of onion, tomato, pomegranate, cubes of cooked potato and plenty of fresh coriander topped with crispy dough pieces flavoured with nigella and ajowan seeds.

  • 500g diced lamb
  • 2 medium red onions
  • 2 cloves of garlic 
  • 1 large carrot
  • 500g floury potatoes 
  • 6 tomatoes

  • 1 lemon
  • ½ pomegranate or 100g ready-prepared seeds
  • 25g bunch of coriander 
  • 50g butter plus extra for buttering
  • 225g plain flour plus extra for rolling
  • 50g red lentils
  • 2 tbsp tomato puree
  • 3 tbsp sugar
  • 4 white bread rolls
  • 200g frozen peas - defrosted
  • Oil for deep frying (vegetable or sunflower oil is fine)
