Here we’ve got a Tex-Mex take on an old-fashioned favourite beef stew and dumplings. In a similar fashion to chilli con carne the beef is slow cooked with a medley of chillies including the smoky chipotle and fruity ancho and pasilla. The stew is topped with pickled onions and delicious corn dumplings flavoured with oregano and toasted cumin.
