Achari Masala ~ Korean Tacos

Achari Masala:
The Hindi word 'achar' translates as pickle and traditionally this is a curry cooked with the spices left over from making one. Pickles are often flavoured with whole seeds including mustard, fennel, cumin and nigella and it’s these that give the curry its interesting texture and nutty flavour. We’re serving it here with homemade chilli garlic naans (way better than shop-bought!) and a simple tomato salad.

Korean Tacos:
Head Spicerer Robyn went on a trip to Los Angeles where she did some thorough investigating into an icon of LA’s food scene - the Korean BBQ taco.The mix of sweet, sticky Asian flavours livened up with Mexican chillies and lime is incredibly delicious. This version features a tortilla filled with rice, Korean bulgogi and kimchi topped with sour cream, guacamole and chipotle Sriracha.

  • Achari Masala:
  • 250g shell-on prawns (raw ones are best) or diced paneer for a veg version
  • 1 small onion
  • 4 tomatoes
  • 1 green chilli (optional)
  • ½ lemon
  • 150g natural yogurt (full fat is best)
  • 65ml milk (any type)
  • Butter for buttering the naans
  • 1 tsp dried yeast (½ a standard-size sachet)
  • 1 tsp sugar
  • 150g plain flour or bread flour (plus extra for rolling) or gluten-free alternative
  • Rice to serve (optional)
  • Korean Tacos:
  • 300g beef stir-fry strips or diced chicken or diced firm tofu for a veg version
  • ½ small Chinese cabbage
  • 1 bunch of spring onions
  • 1 avocado
  • 1 lime
  • 40g sugar
  • 2 tbsp soy sauce (any type) or gluten-free alternative
  • 45ml vinegar (rice, white wine or cider vinegar is best)
  • 1 tbsp flour (any type)
  • 2 tbsp tomato ketchup
  • Rice, tortilla wraps and sour cream to serve
