Albóndigas
Description | Albóndigas is the Spanish word for meatballs and this spiced up Mexican version is cooked in a rich tomato salsa. They're good simply eaten with rice and beans, or even better stuffed inside bread rolls with plenty of the sauce and extra cheese to make a Mexican sandwich known as torta de albóndigas! |

Levi enjoyed his Granny's Albondigas very much. He finished the Arroz Verde before the photo' could be taken. I have to admit I was stunned by both dishes too.
I have just looked back at my previous post for Albondigas. My Grandson Levi has changed so much since then. However his appetite for his Granny's Albondigas hasn't! I agree with him, it is so good. This is a great recipe and very family friendly.
Aw, look at little Levi - looking so grown up! Great to see that he's still eagerly tucking into the albondigas!
Albondigas in lunch box at work, together with arroz verde.
Yum! Looks like a brilliant lunch!
