An Indian Curry Christmas!

Christmas is all about tradition, right? But sometimes tradition can get a little bit dull so here at The Spicery we’ve carefully put together a much more exciting seasonal feast, containing all the usual elements of the traditional Christmas lunch but with an Indian overhaul. To begin, there’s a jazzed up prawn cocktail served with poppadoms and a marie rose raita. Next on the menu is a stunning centrepiece of tandoori turkey with crispy masala potatoes, balti gravy and cranberry chutney. Finally, after a nap on the sofa and the Queen’s speech, for dessert we’ve got Grandma’s favourite, a (boozy) trifle flavoured with cardamon and saffron topped with fragrant rose petals.

  • 2kg turkey crown or whole chicken
  • 400g cooked, shelled prawns (any type)
  • 1kg baby potatoes
  • Mixed veg to serve with the main
  • ½ iceberg lettuce
  • 1 lemon
  • 1 medium mango (or 200g ready-prepared)
  • 60g butter
  • 150ml double or whipping cream
  • 350g natural yogurt (full fat is best)
  • 400g tin of custard
  • 45g tomato ketchup
  • 250g cranberry sauce
  • 1 chicken stock cube
  • 45g sugar
  • 2 tbsp plain flour
  • 100g sponge fingers
  • Poppadoms to serve
  • 2 tbsp sweet sherry, rum or brandy (optional)

After trying many different spice boxes and loved them I was really looking forward the the Xmas edition. I am saddened to say it totally ruined our Xmas dinner. The spices were bland to say the least and did not work at all together. We ended up with cheese and biscuits which were lovely.

This Christmas I decided to do something a little different and I didn’t regret it. The prawn starter was tasty and my family have asked for the recipe. The Baltic gravy was a bug success to even the kids 4&5 year olds asked for more. Only down side was the amount of time I had to spend on the kitchen on Christmas Day, however this could have been avoided if I had prepped better the day before.
