  • 4 chicken legs or large thighs
  • 1 small cauliflower
  • 2 medium onions
  • 2 cloves of garlic
  • Fresh ginger
  • ½ small white or red cabbage
  • 2 tomatoes
  • ½ cucumber
  • 1 medium mango (or 200g ready-prepared)
  • 1 lemon
  • 2 tbsp tomato puree
  • 350g natural yogurt (full fat is best)
  • 100g self-raising flour
  • 50g cornflour
  • Rice to serve
  • Oil for frying (sunflower or vegetable oil is best)

This dish was our first since taking up subscription. What a debut!. The meal was first rate. Difficult to pick a highlight, but the sauce for the chicken was beautifully rich with a smokey edge. Also, I will never look at cauliflower in the same light again! Delicious.

Deep-fried spicy cauliflower is a revelation isn't it Malcolm! Great debut, we look forward to seeing what else you create

I really enjoyed making this dish, everything turned out great, and it all tasted really good, the cauliflower 65 was surprisingly nice I wasn't sure how curry and yogurt would taste but it rocks. I did both red and white cabbage I thought white tasted better.

The curry was fantastic, really dry and super tasty. The little sides worked well and super easy for the kids to make. Red cabbage was so great for such a simple dish. I felt a sprinkling of fresh coriander would have given the Tamarind Mango a little more visual pazzaz; unfortunately we had run out. We didn't have enough cauliflower so added to it with mushrooms and coated and cooked them the same way. Like the cauliflower, the smaller the better, but they worked really well. Crikey, we were full!

Very authentic earthy Indian taste. Not like a British Indian restaurant dish. Different and enjoyable. Particularly loved the crispy cauliflower 65!

Was very cautious about the amount of Kashmiri chilli's and could possibly have used more. Loved the cauliflower, less convinced about the tamarind mango but otherwise another very tasty meal

Beautiful deep red, aromatic sauce made for a delicious grilled chicken. The Cauliflower 65 is worthy of 100% for its’ crispy texture and sprinkling of chaat masala. With the addition of tamarind mango spices, raita spices and podi powder, it was a meal to savour!

Your Balti bowls look fantastic on that embroidered runner - what a gorgeous spread! And you just can't beat that delicious Cauliflower 65, can you? We can't wait to see what you make next!

Amazing, not at all the kind of curry we would normally cook, but a revelation! Especially loved the cauliflower 65... instructions really straightforward to follow and enjoyable to cook and eat.
