Balinese Roast Pork with Lemongrass Rice and Sambal Tomat

In Bali - an island in Indonesia - this roast pork dish (known as babi guling) would traditionally be cooked for ceremonial occasions to feed over 100 people and involve roasting a whole pig. Our scaled-down version uses seasoned pork belly roasted in the oven to create moist meat and deliciously crispy skin. It’s served with a spicy coconut sauce - made from a paste called base gede - containing typically Indonesian spices including lemongrass, galangal, turmeric and tamarind for an umami hit. We’ve also got two of Indonesia’s most common table sauces: firstly a sambal - this version is cooked with tomato and chilli, and secondly kecap manis, a sweet and sticky soy sauce common all throughout Indonesia, Malaysia and Singapore.

Disappointed with this one - quite a bit of work, lot of washing up of pans and bowls, and end result just a bit meh. The coconut sauce and sambal were bland (which is not something I’ve ever encountered with Indonesian food before!). Sure next one will be better!

I really liked this, the pork was lovely and the tomat Sambal was delicious. I didn’t enjoy the coconut sauce as much as I expected (I thought it would be my favourite) however I think that’s just personal taste as it was and smooth and went well with the pork. It was nice to remember a lovely trip to Bali and a fun alternative to a Sunday roast :)
