A British curry house classic…..

There are two schools of thought about the name ‘balti’. One is that it originates from Baltistan in Northern Pakistan, the other that it is a British translation of the Urdu word for ‘bucket’ which refers to the dish the curry is cooked and served in. Whichever is true, it’s now a ubiquitous curry house dish, with the greatest concentration of balti restaurants in the ‘Balti Triangle’ - an area around Moseley and Sparkbrook in Birmingham.

The classic balti is spicy but not hot and has a lovely depth of flavour from the spices that can’t be achieved by the use of a regular curry powder. It’s served here with cauliflower 90, a cumin (jeera) rice, a refreshing onion salad and green raita.

WHOLE SPICES: Cinnamon, Kashmiri chilli, black cardamon
GARAM MASALA: Cumin, coriander, black cardamon, black pepper, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg, fenugreek leaf, coriander leaf
CAULIFLOWER SPICES: Kashmiri chilli, cumin, coriander, black cardamon, black pepper, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg, garlic,  fenugreek leaf, white pepper,  paprika
BUTTER BLEND: Green chilli, white pepper, coriander leaf
RAITA HERBS: Mint, coriander leaf, green chilli
SALAD SPICES: Kashmiri chilli, toasted cumin
CUMIN SEEDS.

Shopping List
  • 600g diced lamb
  • 2 red onions
  • 1 small cauliflower
  • 3 cloves of garlic
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 10g bunch of coriander
  • 2 tomatoes
  • 1 lemon
  • 450g full fat natural yogurt (not Greek yogurt or set yogurt)
  • 50g butter
  • 1 tbsp tomato puree
  • 300g basmati or standard long grain rice (not easy cook)
  • 100g self-raising flour
  • 50g cornflour
  • Poppadoms for 4 to serve
  • Oil for frying (vegetable or sunflower is best!)

So this was my first ever dish created with the Spicery Blends! Thank you for a taste sensation, I had great fun making this feast and your cook book was easy to follow! The Full menu included: Onion Bhajis Lamb Balti Gobi Aloo Pilau Rice Peshwari Naan Mint Raita Chili Garlic Chutney

Another fab selection cooked on the kadai. Chicken Balti, Bombay potato, carrot salad and paratha. Mmmmm tasty

I’ve tried the balti recipe from the Curry Legends book a few times with chicken, this time I used lamb and cooked for the full hour. It was superb, great consistency and taste. I cooked the green chillis into the sauce a bit. The carrot pickle complemented the dish well and the Bombay potatoes were delicious!

Glad to hear that it turned out just as well with the lamb - great work!

2nd time I’ve done this balti from the curry legend kit book, look atthose glorious colours! I swapped the lamb for chicken. Served with fluffy rice & chapatti! which was so easy! DELICIOUS!! 5*

This was the second curry I’ve made from The Spicery and it was amazing. The cauliflower 90 was a new one for me and it won’t be the last time either. I used lean diced lamb and it was a real taste sensation. I’m hooked!

Lamb Balti from the Curry Legend book. Took the advice on ‘raise your game’ and marinated overnight in yoghurt. Absolutely delicious. Served with Aloo Palak, fabulous.

Well done for following the 'raise your game' suggestion - no doubt this made your dish taste even more flavourful and fabulous! It looks like a spectacular feast!
