Bihar is located on the river plains of the Ganges where flood-cycles produce incredibly fertile soil, and therefore an abundance of vegetables, fruit, rice and wheat. As a result Bihari meals often consist of an array of colourful veg dishes, as served here with a relatively simple chicken curry.

Beetroot is turned into pink pooris and a cooling raita, tomatoes are roasted to intensify the flavour and mashed with spices and onions to make a typical Bihari dish known as choka, spinach is simply stewed and a pilau rice flavoured with turmeric, fenugreek and mustard completes the meal.

RICE SPICES: Turmeric, fenugreek, toasted brown mustard, toasted cumin
POORI BLEND: Ajowan, fennel
CHAAT MASALA: Amchur, salt, chilli, cumin, black pepper, coriander, ginger, ajowan, mint, asafoetida
RAITA BLEND: Toasted brown mustard, toasted cumin, mint
TOMATO CHOKA SPICES: Green chilli, green bell pepper, mustard, black pepper, ginger, garlic

  • 500g diced chicken
  • 2 medium onions
  • 3 cloves of garlic
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 1-2 green chillies (optional)
  • 300g ready-cooked beetroot (not in vinegar)
  • 6 medium tomatoes
  • 400g spinach (fresh or frozen)
  • 250g natural yogurt (full fat is best)
  • Oil for frying (sunflower or vegetable oil is best)
  • 2 tbsp tomato puree
  • 160g self-raising flour
  • 300g basmati or standard long grain rice (not easy cook)

Not a normally a beetroot fan but the flavouring of the pooris was subtle, and the tomato choka went down particularly well in this house!

The flavours in this are amazing. They all compliment each other and work so well. I added the two green chillies for that extra kick, which it gave us!

One of the tastiest, and definately most colourful curries we have had. Beetroot pooris were a great treat and the earthiness of the brown mustard seeds was a strong feature throughout.

Fabulous combination of spicy, sour, sweet etc makes for a really good platter. This one felt a bit more effort, but well worth it. It's a winner. The tomato relish was my favourite ♥️

My first attempt, straightforward instructions, simple ingredients, inexpensive as I didn’t need to purchase costly spices in volumes that I may only require small amounts. Nice variety, looks great on the table. Lots of washing up !
