How to use this month's free sample
This simple seasoning is inspired by Indonesian satay spice mixes - a blend of ground ginger, coriander, cumin and turmeric gives a lovely colour and depth of flavour whilst tamarind powder provides a touch of tanginess, and fragrance is imparted from lemongrass and lime leaves.
Balinese BBQ Seasoning Recipe:
You Need:
500g diced chicken or use meat-free chicken style pieces for a veg version
1 lime
1 tbsp soy sauce (any type)
2 tsp sugar
Rice, sliced cucumber and sweet soy sauce to serve
Method:
Preheat the grill
Mix the chicken with the juice of ½ the lime, the soy sauce, sugar, 1 tbsp oil and the BALINESE BBQ SEASONING
Thread onto skewers then grill, turning regularly, for 10 minutes or until the chicken is cooked through and starting to brown and caramelise around the edges
Serve with the rice, sliced cucumber and sweet soy sauce on the side, and the remaining ½ lime to squeeze over at the table
