Chai Tea

chai tea

Chai (also known as masala chai) is drunk throughout India and consists of black tea brewed with an assortment of fragrant spices, evaporated milk and sugar. It makes a delicious and authentic drink to enjoy after a curry!

Ingredients

  • 2 tea bags
  • 2 tbsp sugar
  • 170g evaporated milk

Spices

  • Chai Tea Blend (1 portion/ 3 tbsps): black pepper, cloves, ginger, mace, star anise, cassia, green cardamon Please note if you're making a bigger batch, you'll need to scale up the fresh ingredients in proportion but the spices only by 2/3 or it will be too intense!

Method

  1. Simmer the tea bags, CHAI TEA BLEND and 2 tbsp sugar in 400ml water and the evaporated milk for 5 minutes or until the sugar has dissolved and the tea has infused
  2. Strain the chai between 4 small cups (discarding the tea bag and spices) and add extra sugar to taste
