This month's free sample: Christmas Pralines Spices
These fabulous treats can be whipped up using any combination of nuts you might have at home, and the sweet fragrant spices add a lovely Christmassy flavour with just a tiny pinch of mild Mexican chilli powder for a slight kick! They'll keep well in the fridge and you can enjoy the occasional square after dinner, or chop it up and sprinkle over ice cream for a fantastic contrast of flavours and textures.
You Need:
150ml cream (any type)
30g butter
100g nuts (eg almonds, pistachios, pecans, hazelnuts etc) - roughly chopped
200g sugar (dark brown is best but any type is fine)
Method:
Heat the nuts with the cream, butter, sugar, CHRISTMAS PRALINE SPICES and ¼ tsp salt on a low heat, stirring regularly, for 30 minutes or until the mix is rich and very thick and a spoon stirred through the centre leaves a clear trail for 3 seconds
Pour the mix onto a parchment-lined tray to make an even layer about 5mm thick, then leave in the fridge for at least 30 minutes to cool and set
Cut into small squares to serve (the praline will last for at least a week in the fridge)

Chile Colorado with Arroz Verde - Recipe Kit
"I didn't really want to leave a review out of concern that this might sell out. It is honestly the best chilli I have ever tasted & I have been making & eating chilli recipe's for over 40 years. Just the right amount of heat that makes you want to come back for one last fork full, then another, its that moreish. My only deviation from the recipe (lets face it we all do) was to cook in the slow cooker, this made the meat falling apart tender, which is the way I like to cook supermarket beef. The rice & pico de gallo compliment it perfectly. Served with a nice cold beer. Perfect."

Coconut Rice - Curry Legend World Tour
"I am always willing to try a different rice recipe for a change. As I had some coconut milk needing used up, I gave this a try. I was delighted at the results, the rice was perfect texture. (Possibly my most successful to date!) The flavour was pleasant but the coconut was much more subtle than I expected. I think the South Indian Coconut Rice from ‘Curry Legend Chef’s Specials' is more impressive in terms of flavour."
We’re pleased to hear that the consistency of this rice turned out perfectly! It’s definitely a plainer and more subtle dish than the South Indian Coconut Rice - which has a more impressive appearance and varied texture from the desiccated coconut and crispy fried cashews - but is still a good recipe to have up your sleeve when, like you say, you have half a tin of coconut milk to use up!
