Lebanese Manakish

Lebanese Manakish

Za’atar is a delicious seasoning used throughout the Middle East containing thyme, sesame seeds and plenty of sumac (a tangy ground dried berry). It makes a great dry seasoning for chicken or lamb or you can make these fantastic Lebanese flatbreads known as manakish.

  • Total Time: 30 minutes
  • Serves: 4

Ingredients

  • 250g plain flour or bread flour
  • 2 tsp of baking powder
  • 250g full fat natural yogurt
  • About 2 tbsp of good quality olive oil

Method

  1. Mix the flour with the baking powder, yogurt, ½ the ZA’ATAR and a pinch of salt to a soft dough (add a bit more flour if the dough is too sticky). Knead on a floured surface for 1 minute until smooth then cover and leave to rest for 15 minutes
  2. Divide the dough into 4 pieces on a floured surface then roll out into 20cm x 10cm ovals
  3. Dry fry in a hot frying pan for 2 minutes on each side or until puffed up slightly and beginning to char in patches
  4. Brush each side of the flatbreads with olive oil and sprinkle the over the remaining ZA’ATAR
