Lebanese Manakish
Za’atar is a delicious seasoning used throughout the Middle East containing thyme, sesame seeds and plenty of sumac (a tangy ground dried berry). It makes a great dry seasoning for chicken or lamb or you can make these fantastic Lebanese flatbreads known as manakish.

Ingredients
- 250g plain flour or bread flour
- 2 tsp of baking powder
- 250g full fat natural yogurt
- About 2 tbsp of good quality olive oil
Spices
- Za'atar (1 portion/2tbsp): Thyme, sumac, toasted sesame seeds, salt

Method
- Mix the flour with the baking powder, yogurt, ½ the ZA’ATAR and a pinch of salt to a soft dough (add a bit more flour if the dough is too sticky). Knead on a floured surface for 1 minute until smooth then cover and leave to rest for 15 minutes
- Divide the dough into 4 pieces on a floured surface then roll out into 20cm x 10cm ovals
- Dry fry in a hot frying pan for 2 minutes on each side or until puffed up slightly and beginning to char in patches
- Brush each side of the flatbreads with olive oil and sprinkle the over the remaining ZA’ATAR
