Brown Stew Chicken
‘Brown stew’ is a distinctively Caribbean dish where the meat is browned in caramelised sugar, then cooked in a sauce rich in herbs and spices to produce a thick, flavoursome gravy. Whether eaten with traditional rice and peas or a pile of buttery mashed potato it makes fantastic comfort food.

My fave from World Curry Legend book, this is amazing!!
Delicious balance of heat and sweetness, and very easy to make for a mid week meal
This looks really tasty and nourishing, Eleanor - we're really pleased to hear how much you enjoyed the balance of flavours, and that you found it nice and simple to cook too!
Brown Stew - swapped the chicken for beef as suggested and it is equally as tasty. Served with rice and peas and mango hot sauce.
That looks like a fantastically rich sauce, Laura - great job!
This is one of our favourites, made extra special with Mango Hot Sauce
