Bunny chow is a South African curry served in a hollowed out loaf of bread - it was originally served as a street food and the bread made it portable (it soaks up all the juices and is possibly the best part!). The carrot sambal on the side is a traditional accompaniment to add some freshness and crunch to the meal, along with a classic South African chilli sauce known as pili pili, making a hugely satisfying dish and some good, fun finger food!

  • 500g diced chicken (thighs are best)
  • 2 large carrots
  • 3 medium onions
  • 2 cloves of garlic
  • 3 medium tomatoes
  • 10g bunch of coriander (optional)
  • 1 lemon
  • 4 tsp tomato puree
  • 50g peanuts
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • ¾ tsp sugar
  • 4 crusty bread rolls
  • Large lidded pan
  • Blender
  • Small frying pan

This was the bunny chow with carrot sambal and pili pili sauce kit. It was absolutely delicious! And so much fun to make in the big bread rolls! For me, the carrot sambal with toasted peanuts was the star of the show. Delicious on the crusty bread dipped in the sauce. Another great meal from The Spicery!
