This dish is a more sophisticated version of the ever popular chicken tikka masala - it has its origins in Punjab in the north of India and consists of chicken marinated in spiced yogurt, then cooked in a sauce rich with butter, tomato and spices including methi (fenugreek) leaves. The fenugreek gives a particular ‘curry’ flavour, with a really sweet, pungent scent that’s very recognisable. The curry is served here with a fragrant pilau rice, buttery parathas, a crunchy kachumber salad, savoury mushroom bhaji and a sweet and fiery mango chutney.

  • 225g natural yogurt (full fat is best)

  • 3 tbsp vinegar (white wine or cider vinegar is best)
