Carrot barfi is a very rich, indulgent kind of Indian fudge flavoured with cardamon, and our METHI BLEND - with cinnamon, pepper and fenugreek for a sweet caramel flavour - works perfectly here.

Delicious not too sweet and just the right size. Be careful not keep stirring and not let the mixture stick to the pan.

I did make 12 but 3 vanished before I could take the photo. I think that says it all!

The perfect, fudgy, spicy accompaniment to go with a cup of tea or coffee... we don't blame you for digging in before you snapped a picture! They look brilliant!
