These chicken burgers are based on a popular South Indian dish known as Chicken 65. The chicken is first coated in a yogurt based marinade and then double dipped into flour spiced with Kashmiri chilli, garam masala and curry leaves to create a moreishly crunchy coating. They're served here in a classic burger bun with tangy tamarind chutney, mint mayo and spicy pickled onions - add a slice of cheese to make it even more dirty and delicious! The burger is teamed here with a couple of simple sides - delicious Bombay potatoes and a refreshing tomato chaat salad.

  • 4 large skinless, boneless chicken thighs
  • 1 red onion
  • 2 cloves of garlic
  • Fresh ginger
  • 500g new potatoes
  • 100g radishes
  • 3 tomatoes
  • 1 lemon
  • 25g bunch of coriander
  • 150g natural yogurt (full fat is best)
  • 4 cheese slices (optional)
  • 100g mayonnaise
  • 100g self-raising flour
  • 50g cornflour
  • 3 tbsp sugar
  • 50g Bombay mix or salted nuts
  • 4 burger buns
  • Oil for frying (sunflower or vegetable oil is best)
