These chicken burgers are based on a popular South Indian dish known as Chicken 65. The chicken is first coated in a yogurt based marinade and then double dipped into flour spiced with Kashmiri chilli, garam masala and curry leaves to create a moreishly crunchy coating. They're served here in a classic burger bun with tangy tamarind chutney, mint mayo and spicy pickled onions - add a slice of cheese to make it even more dirty and delicious! The burger is teamed here with a couple of simple sides - delicious Bombay potatoes and a refreshing tomato chaat salad.

  • 4 large skinless, boneless chicken thighs, or use 2 x 300g packs of firm tofu
  • 1 red onion
  • 2 cloves of garlic

  • 500g new potatoes
  • 100g radishes
  • 3 tomatoes
  • 1 lemon
  • 25g bunch of coriander
  • 150g natural yogurt (full fat is best)
  • 4 cheese slices (optional)
  • 100g mayonnaise
  • 100g self-raising flour
  • 50g cornflour
  • 3 tbsp sugar
  • 50g Bombay mix or salted nuts
  • 4 burger buns
  • Oil for frying (sunflower or vegetable oil is best)

Another winner from our Food Truck Subscription! The Chicken burgers were top quality, and fun to make because of the double dipping in flour, water and flour again. Spiced perfectly. Personal favourite were the pickled onions, added a nice bit of spice that could be cooled by the Mint Mayo. I felt obliged to make the legendary Spicery Christmas Bombay Mix for the Chaat Salad, any excuse!
