The Moghuls were heavily influenced by Persian culture and introduced much into their Indian empire, from architecture and art right down to the spices used in their cooking. Cardamon, cinnamon, rose petals, nuts and saffron were frequently used alongside more traditional Indian spices to impart a delicate, sophisticated flavour to their cuisine, such as in this classic korma.

We're serving this mildly spiced, creamy curry with earthy saag aloo, a fiery chilli garlic chutney, flaky paratha breads and a refreshing onion raita.

KORMA WHOLE SPICES: Cinnamon, green cardamon, bay, Kashmiri chilli
KORMA GROUND SPICES: Coriander, cumin, turmeric, Kashmiri chilli, black pepper, nutmeg, mace, saffron, fennel, cinnamon, green cardamon, black cardamon, cloves
CHUTNEY SPICES: Fenugreek, chilli, ginger, Kashmiri chilli, turmeric
RAITA BLEND: Mint, coriander leaf, toasted mustard seeds
PARATHA SEEDS: Ajowan, nigella
SAAG ALOO SEEDS: Cumin, mustard seeds, fennel, asafoetida
SAAG ALOO GROUND SPICES: Coriander, cumin, turmeric, Kashmiri chilli, fennel, black pepper

  • 600g diced chicken (thighs are best)
  • 500g new potatoes
  • 1 large onion
  • 6 cloves of garlic
  • Fresh ginger - finely chopped to make 2 tbsp
  • 200g spinach
  • 1 lemon
  • 2 tbsp vinegar
  • 70g butter
  • 250g full fat natural yogurt (not Greek yogurt or set yogurt)
  • 250g plain flour plus extra for rolling
  • 20g sugar
  • 50g ground flaked almonds
  • 1 tbsp tomato puree
  • Rice for 4 to serve (optional)

Brilliant and very tasty recipe. Had no cream so used coconut milk instead. Easy and quick - took 40 min from start to finish including rice and condiments.

Great job with the substitutions and speedy cooking!

This ‘kit’ has sat in my cupboard for 18 months, eventually on Tuesday with plenty of time on my hands I used it. I thoroughly enjoyed the preparation and the meal was a culinary delight ! I have immediately ordered the Curry Legend ... and you can rest assured it will not sit in my cupboard for so long this time !
