As many as 90% of the Indian restaurants in Britain are owned by Bangladeshis, so some of the dishes, like this chicken shatkora, are actually of Bangladeshi origin. Shatkora is a bitter citrus fruit from Bangladesh, the rind of which is used to flavour curries - it has a very similar flavour to the grapefruit we’re using here as a substitute - although you can use shatkora rind if you can get hold of some! The shatkora curry is served here with a classic restaurant dish of Bombay potatoes, rice flavoured with a rose petal masala, a fiery Naga brinjal pickle and a cooling raita.

Bombay Potato Spices: turmeric, coriander, Kashmiri chilli, brown MUSTARD, cumin, yellow MUSTARD, asafoetida

Naga Brinjal Spices: naga chilli, Kashmiri chilli, paprika, garlic, nigella

Raita Blend: coriander leaf, mint, nigella

Rose Petal Masala: cumin, coriander, black cardamon, black pepper, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg, rose

Shopping List
  • 500g diced chicken (thighs are best)
  • 500g baby new potatoes
  • 3 medium onions
  • 3 cloves of garlic
  • Fresh ginger
  • 1 small aubergine
  • ½ grapefruit (any colour)
  • 25g bunch of coriander
  • 25g butter or use oil for dairy-free alternative
  • 150g natural yogurt (full fat is best) or dairy-free alternative
  • 3 tbsp vinegar (white wine or cider vinegar is best)
  • 300g basmati or standard long grain rice (not easy cook)

Another of our now legendary Spicery Curry Nights. Definitely would say the Naga Brinjal pickle was FIERY! After googling Naga chillis now I know why. A really good tasting curry with the usual excellently matched sides. Thank you THE SPICERY for another inspiring foodie evening.

That's some hot pickle! Flavours were great. This is our 2nd kit and we're beginning to enjoy using almost every pan in the kitchen. It's worth it!

Chicken Shatkora night - a real treat! especially with the chicken done in the slow cooker. Only two of us, so enough frozen for another treat when I don't feel like cooking :o)
