As many as 90% of the Indian restaurants in Britain are owned by Bangladeshis, so some of the dishes - like this chicken shatkora - are actually of Bangladeshi origin. Shatkora is a bitter citrus fruit from Bangladesh, the rind of which is used to flavour curries - it has a very similar flavour to the grapefruit (which we’re using here as a substitute) although you can use shatkora rind if you can get hold of some! The shatkora curry is served here with a classic restaurant dish of Bombay potatoes, rice flavoured with a rose petal masala, a fiery Naga brinjal pickle and a cooling raita.

  • 25g butter
  • 3 tbsp vinegar (white wine or cider vinegar is best)
