Chicken Tikka Biryani Night

Biryani is a Moghul dish of marinated meat or vegetables layered with perfumed rice and topped with crispy onions. This version has a base of chicken tikka, a long time favourite in British-Indian restaurants that’s also hugely popular in northern India. The aromatic biryani is served here with a rich apple and ginger chutney, a cooling raita, refreshing kachumber salad and a sweet and sour autumnal pumpkin curry to round the meal off perfectly. Bring the biryani to the table still covered, so when opened at the table everybody can savour the beautiful aromas!

  • 500g diced chicken (thighs are best)
  • ½ medium pumpkin or squash (about 400g prepared weight)
  • 3 large onions
  • 2 tbsp fresh ginger
  • 10g bunch of coriander
  • 3 tomatoes
  • 1 cucumber
  • 1 cooking apple
  • 1 lemon
  • 250g natural yogurt (full fat is best)
  • 70g butter
  • 200ml milk (any type)
  • 60g raisins or sultanas
  • 50g flaked almonds or cashew nuts
  • 35g sugar
  • 350g basmati rice
  • Oil for frying (sunflower or vegetable oil is best)
