This BBQ blend is a real all-rounder - smoky from the chipotle chilli and just a little bit spicy, it goes great with chicken or courgette but would also work a treat with lamb or pork. You could even mix it with butter and slather it on to your barbecued corn on the cob. However you use it, it's sure to add some flavour!
CHIPOTLE BBQ BLEND (1 portion = 2 tbsp): smoked paprika, salt, sugar, green chilli, coriander leaf, ancho chilli, cinnamon, chipotle chilli, Mexican oregano, guajillo chilli, allspice, cumin, pasilla chilli, aniseed, green bell pepper, red bell pepper, cloves, jalapeno chilli, annatto, bitter orange, epazote, paprika, thyme
May contain traces of celery, mustard and sesame
Chipotle BBQ Recipe:
PREP 10 mins
COOK 20 mins
500g diced chicken (thighs are best) or thickly sliced courgette for a veg version
1 red onion - quartered then layers separated
1 clove of garlic - finely grated
1 tbsp vinegar (white wine or cider vinegar is best)
Salad, tortillas or wraps and yogurt or mayonnaise to serve
1 portion of Chipotle BBQ Blend
Mix the chicken and onion with the garlic, vinegar, 2 tbsp oil and the CHIPOTLE BBQ BLEND until fully coated, then thread on to 4 skewers.
Leave to marinate
Light the BBQ or preheat the grill now
Grill the skewers for 15 minutes, turning frequently, or until the chicken is cooked through and beginning to char around the edges
Serve with salad, tortillas or wraps and yogurt or mayonnaise
