At this time of year, many of us try to eat more healthily, so this month we’ve got a bright, fresh-tasting chicken broth flavoured with ginger and lemon, both of which are believed to have healing properties in ayurvedic medicine. Turmeric (a key ingredient in our HALDI BLEND) is also revered for its health benefits, and here it adds a vibrant colour and earthy flavour to this satisfying soup.

Shopping List
  • 2 chicken legs (or use 3 large carrots and 1 parsnip peeled and cut into small bite-size pieces and 1 veg stock cub for a veg/vegan version)
  • 1 onion
  • 3 cloves of garlic
  • Fresh ginger
  • 1 green chilli
  • 1 lemon
  • 10g bunch of coriander (optional)
  • 200g pearl barley (or use bulgur wheat)
  • Crusty bread to serve

Super nice tasty soup, perfect comfort food on a dull day. I did find that the pearl barley soaked up all the water, so I added extra to keep it more like a soup.
