The beautiful island of Corfu (or Kerkyra) is a popular holiday destination, not only for its fantastic scenery but also its tavernas which serve up traditional Greek dishes. Here we’ve got moussaka, a baked aubergine and lamb dish finished with a rich yogurt and cheese topping. Like much of the cooking in the Mediterranean, the spicing of the dish is subtle but gives a lovely depth of flavour. We’re serving it with tzatziki, a refreshing Greek salad, and tsigareli - a spicy braised spinach dish unique to Corfu. For dessert, we've got a delicacy known as loukoumades (Greek donuts) soaked in a honey syrup flavoured with lemon verbena, allspice and cassia and coated with sesame seeds.
