The Indonesian island of Java is home to over 145 million people - a diverse population made up of mostly indigenous cultures. Over 90% of the population is Muslim so chicken and seafood are widely eaten there, with rice, corn and coconut being grown around the island. Here we have a rich chicken curry flavoured with turmeric, cassia and lemongrass served with crispy corn (jagung) fritters.

There are over 300 varieties of sambal in Indonesia - no meal would be complete without the spicy condiment! - so on the side we've got a tomato version called sambal bajak. Dessert is rujak – a sweet and sour mix of pineapple and cucumber, served with caramelised peanuts and lemongrass ice cream.

Paste Spices: shallot, coriander, turmeric, paprika, cumin, lemongrass, galangal, mild chilli flakes, fennel, cassia, kaffir lime leaf, white pepper

Whole Spices: star anise, lemongrass

Tamarind Sauce Spices: tamarind (tamarind, cornstarch), mango powder, ginger, galangal

Sambal Spices: cumin, shallot, garlic, chilli, paprika

Jagung Spices: kaffir lime leaf, ginger, mild chilli flakes, chives, garlic

Rice Spices: turmeric, coriander, cassia, star anise, nutmeg, cloves

Lemongrass: lemongrass       

Shopping List
  • 250g diced chicken (thighs are best)
  • 100g shelled prawns (any type)
  • 150g shallots or 1 medium red onion
  • 3 cloves of garlic
  • 2 tomatoes
  • ½ cucumber
  • ½ small pineapple (or 200g ready-prepared)
  • 150ml double cream
  • 200ml full fat coconut milk
  • 1 egg (any size)
  • 150g jasmine or standard long grain rice (not easy cook)
  • 198g tin of sweetcorn - drained
  • 50g peanuts (roasted and salted are fine) - roughly chopped
  • 30g cornflour
  • 90g sugar
  • Oil for frying (sunflower or vegetable oil is best)

Passports packed to sample the delicious and unusual flavours. Lemongrass ice cream with tamarind flavoured fresh pineapple and cucumber finished off with caramelised nuts...who’d have thought!

The Bakwan Jagung (corn fritters) were brilliant, easy to do and tasy, something I wouldn't have tried without the Spicery. Also the Lemongrass ice cream with caramalised nuts and Rujak was delicious.

Sometimes a bit confusing to follow. But the result was well worth it. Only down side was lots of washing up for the many components for the main meal.

Easy to follow. Lovely flavours. Great dessert recipe of peanut brittle, banana wrapped in a pancake served with coconut icecream.
