Dotonbori in Osaka is a food lover's paradise with numerous restaurants and izakayas (late night bars which also serve food) to get your fix. To begin we’ve got an Osaka-style okonomiyaki pancake - shredded vegetables mixed into a batter then cooked a little like a Spanish tortilla, topped with the Japanese version of brown sauce and a wasabi flavoured mayo. Next we’ve got a spicy bowl of tantan ramen which is based on dan dan noodles, a dish from the Sichuan province of China. Finally a rich ginger soy creme caramel to cool down the chilli heat from those noodles!

  • 1 bunch of spring onions
  • 250g pak choi
  • 1 medium carrot
  • 500ml soy milk (any type)
  • 4 eggs (any size)
  • 2 heaped tbsp mayonnaise
  • 1 tbsp tahini or smooth peanut butter
  • 40ml soy sauce (any type)
  • 2 tsp vinegar (rice, white wine or cider vinegar is best)
  • 40g cornflour
  • 135g sugar
  • 1 chicken stock cube
  • Dried egg noodles for 2
