  • 250g diced chicken (thighs are best)
  • 150g shelled prawns (raw ones are best) or use extra diced chicken
  • 150g shallots or 1 medium red onion
  • 2 cloves of garlic
  • Fresh ginger
  • ½ cucumber
  • 150g beansprouts
  • 25g bunch of coriander or mint
  • 1 lime
  • 1 large banana
  • 50g peanuts
  • 100g sugar
  • 65g self-raising flour or gluten-free alternative
  • ¼ tsp baking powder (optional)
  • 1 tbsp soy sauce (dark is best) or gluten-free alternative plus extra to serve
  • 1 tbsp fish sauce or use extra soy sauce
  • 400ml full fat coconut milk
  • Dried noodles for 2 (any type)
  • Oil for frying (sunflower or vegetable oil is best)

This was excellent. Can't fault the satay chicken or the laksa and the banana pisang goreng was delicious, especially with the coconut syrup. The beansprout salad was a bit pointless though!

We're so pleased to hear how much you enjoyed this dish, Owen! Sorry you found the salad pointless, though - it's just meant to add a bit of freshness and crunch to the meal, to balance the richness of the satay chicken.
