Dhansak is a characteristically sweet, sour and hot curry in which lentils form the base of the sauce. Here we’ve got the heat element on the side in the form of a spicy tomato chutney, so you can add as much as you like! Perfect for scooping up the curry are some homemade flaky paratha breads layered with a mild red bell pepper and chilli paste, which in India would be known as shimla mirch parathas. Some simply cooked saag (spinach) and a cooling raita complete the meal.
