Koshari is made of a combination of lentils, crunchy vermicelli and rice which all sounds rather heavy, but the topping of crispy fried onions and a deep flavoursome tomato sauce flavoured with toasted cumin, oregano and chilli makes it something very special. The chilli flakes we’re using here are mild enough to sprinkle on your food at the table a bit like using black pepper, and you can also temper any heat with the tangy yogurt salad and crunchy pickles. For dessert we’ve got a delicious orange salad soaked in a fragrant orange flower syrup - a refreshing finale to any meal!

CHILLI FLAKES: Aleppo chilli flakes, Urfa chilli flakes
YOGURT SPICES: Toasted cumin, oregano, mint
PICKLE SPICES: Dill seed, nigella seed, red pepper, green pepper, mustard seeds, garlic
SYRUP SPICES: Green cardamon, orange flowers, allspice, cloves, cassia chips
CARDAMON SPRINKLE: Green cardamon, grains of paradise, bitter orange powder

  • 2 onions
  • 3 cloves of garlic
  • ½ cucumber
  • ½ small cauliflower
  • 1 carrot
  • 3 oranges
  • 200g full fat natural yogurt, Greek yogurt or dairy-free alternative plus extra to serve with the dessert
  • 400g tin of chopped tomatoes
  • 75g dried vermicelli pasta or gluten free alternative
  • 200g dried puy or brown lentils
  • 150g basmati rice or standard long grain rice (not easy cook)
  • 50g walnuts or pistachios - roughly chopped
  • 50g dates - thinly sliced OR raisins - left whole
  • 100g honey
  • 2 tbsp sugar
  • 50ml vinegar (white wine or cider vinegar is best)
  • 130ml oil for frying (vegetable oil or sunflower oil is best)

Very tasty recipe. Had to put off eating the orange salad until later as there was such a lot of tasty food.

Wow this looks absolutely excellent, beautiful pattern on the place mats too!

Fantastic mix of complex flavours and some new ideas of how to use regular veggie store ingredients. We especially loved the crunchy pickles and the oranges in syrup, which we served with dates and pistachio nuts.
